
Our Winery will produce Cabernet Sauvignon, Shiraz, Chardonnay and Spanish Ruby & White Port of only the highest calibre.
Our Winery we only use home-grown grapes and will never purchase grapes from an outside source or another winery.
This way we will be able to directly control the growing process and guarantee the high quality of the finished product is maintained.
We will not out-source any processing, employing only our own in-house facilities.
Doing this will ensure 100% control over how the vines are grown, how and when the grapes are picked and, most importantly, how the grapes are handled, stored and processed.
Our varietal stocks have been specifically sourced based on their historical quality of producing rare and fine wines.
If required, as is the case with the Spanish Ruby & White Port and Cognac, the vine stocks have been imported from overseas.
We pride ourself, and place great importance on, our ability to maintain 100% control of the entire process; from the selection of vines, to their growing and care, to their harvest and, finally, to their processing.
When the wine has been processed, the final stage is storage and ageing.
This is a very important part of the making of fine quality wine.
We employ the 8,000-year-old Georgian tradition of using terracotta qvevri’s, large 500 litre pots, which are fully buried in the floor of the alcohol room.
There the wine is left in the ‘Cradle of Mother Earth’ to be nurtured and cared for with minimal human intervention or disturbance.
The way wine has been matured for millennia.
Only then can we say, with confidence, that the final product will be of sufficiently high calibre to put our label on it.
