We own and operate a boutique 2,000 litre copper pot still with 2 x 12 copper plate, 12” stainless steel columns.

The pot still is used for the distilling of fine grade Irish Whiskey and Cognac while the columns are used for producing fine grade Gin and Vodka.

Each 2,000 litre batch run will produce about 300 litres of spirits with an alcohol content between 88 and 92 percent.

The spirit is then stored in either terracotta qvevri’s, which are fully buried in the floor of the alcohol room, new American or French oak barrels, or American and French oak barrels previously used for the ageing of Sherry, Port or Cabernet Sauvignon.

This is where the ageing process begins.

Each vessel and method infuses its own very unique and distinct flavour and colour to the spirit.

Ageing can be anywhere from 3 years, as in the case of Gin and Vodka, to 6+ years for Brandy and Cognac, to 8+ years with Irish Whiskey.

The final part of the process is the bottling which sees pure, sterilised water added to the spirit to ‘cut’ the alcohol content back to the more traditional range of 40 to 45 percent.

The end result is a very refined and drinkable spirit.
